Red Velvet Chocolate Chip Muffins

The best way to start any holiday is with a holiday breakfast to match! I found this recipe for red velvet chocolate chip muffins on cookiescakespiesohmy.com.  I knew right away that that was what I was going to make for Valentine’s Day breakfast. The only change I made was substituting chocolate chips with white chips since I thought white with red was a little more valentiney. (is that a word????) I hope you give them a try, if not for Valentine’s Day, then just to brighten up your morning. I know they will mine, since I stole one after they came out of the oven. At least I had a sister as my partner in crime, so I am not completely guilty. 😉

Red Velvet Chocolate Chip Muffins

Ingredients:

1½ cups flour

2 Tbl unsweetened cocoa

1/2 cup sugar

2 tsp baking powder

1/4 tsp salt

1/3 cup mini chocolate chips (I used white)

2/3 cup milk

1 egg

2 Tbl oil

1/4 tsp vanilla

1 tsp red food coloring

Directions:

Preheat oven to 400°. Prepare 6 muffin cups, spray or papers (use Demarle, no spray or papers needed).

In large bowl, stir together flour, cocoa, sugar, baking powder, salt, and mini chocolate chips. In another bowl, whisk together milk, egg, oil, vanilla, and red coloring. Pour milk mixture over dry ingredients and stir by hand just until combined.

Scoop batter into muffin cups. Bake 18-22 minutes, or until centers are set. Cool in pan 10 minutes, remove from pan and cool on cooling rack.
