I just had my wisdom teeth taken out, so I didn’t just make these and bite into one, even though I would love to. (But maybe not because that would hurt. I am confused!) I can’t wait for the big gaps where my teeth used to be to fill up. Then I can get back to my groove and the kitchen. 🙂 Anyway, I made these a while ago and never posted them. Can you imagine not posting a cookie recipe right away? I know, it totally breaks all of the blogging rules. Hopefully I have justified my mistake by posting it now.
These cookies are so perfect! They taste just like snickerdoodles, only better because they are also blondies. I sprinkled extra cinnamon and sugar on top when they came out of the oven, so you are welcome to do that. I suppose they just weren’t quite sweet enough. 🙂
I got the recipe off of My Baking Addiction. (sounds like a perfect name doesn’t it?)
Snickerdoodle Blondies
Ingredients:
- 2 2/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon grated or ground nutmeg
- 1 teaspoon salt
- 2 cups packed brown sugar
- 1 cup butter, room temperature
- 2 eggs, at room temperature
- 1 tablespoon vanilla extract
- 2 tablespoons granulated sugar
- 2 teaspoons cinnamon
- a pinch nutmeg
Directions:
1. Preheat oven to 350 degrees F. Lightly grease and/or line a 9×13 inch pan. Combine the flour, baking powder, cinnamon, nutmeg and salt and set aside.
2. In large bowl, beat together butter and brown sugar for 3-5 minutes. Add in the eggs one at a time, then the vanilla, and beat until smooth.
3. Stir in the flour mixture until well blended. Spread evenly in prepared pan (mixture will be somewhat cookiebatter-ish, so it’s best to spread it out with a greased spatula or your hands). Combine the granulated sugar, cinnamon, and nutmeg in a little bowl. Evenly sprinkle cinnamon sugar mixture over the top of the batter.
4. Bake 25-30 minutes or until surface springs back when gently pressed. Cool before cutting. Makes 20-24 bars.
Enjoy!

I love this version because you get more snicker doodle bang for your buck — they’re so thick and chewy, with plenty of cinnamon flavor! 🙂
I know! These are so good! Thanks so much for stopping by! I hope you do again!
Ooooh, these sound delicious Kloe! I love snickerdoodles. Cinnamon and sugar make a great pair. I hope you’re recovering well from your wisdom teeth surgery. I’m actually super jealous, because I don’t have dental insurance, and to get my wisdom teeth pulled would have cost over $6000. BAH! Instead, I left them and now they’re completely grown in. Guess that’s why I’m so wise, hahaha! *wink*
You are so sweet! Thanks, I am feeling a whole lot better! Yikes, I would have left them in at that price too! Enjoy the cookies and have a lovely day, Natalie. ♥ Thanks for stopping by!
I too remember waiting for the gaps to fill up so I could get back to eating properly when I had my wisdom teeth removed! Wishing you a quick recovery!
Thank you so much!
Can I confess I do not know what a snicker doodle is? My daughter loves blondies tho so I will give her this recipe to try out!
Snickerdoodles are just cinnamon and sugar-y cookies! What could go wrong right? Yes, you should try them!
These look amazing!
Thanks, Chloe!
These look delicious! I am obsessed with a cinnamon-nutmeg combination, I’ve never though to put nutmeg in snickerdoodles! Will definitely try this 🙂

Thanks so much, Liz!
These look lovely! Ouch, I feel your pain… I remember when I had my wisdom teeth removed and all I could think about was food. I think the first thing I had when I could finally eat was chocolate! x Mel
Yeah! I am really looking forward to normal! Thanks for stopping by. I love to hear from everyone!

Kloe, these blondies look amazing. I don’t think you can ever go wrong with Snickerdoodle. Such a tasty cookie. Now to have it in blondie form? Oh my. I don’t think I could stop at one. 🙂
I hope you are on the road to recovery! I had my wisdom teeth out about 10 years ago. It wasn’t so bad. I love mashed potatoes, so that’s pretty much what I ate for a couple days. I was happy!
I am almost completely better now! Thanks for the lovely comment, Ashly. I know, nothing could go wrong with this combo!
Can you believe I’ve never made snickerdoodles? I’ve made blondies before though, and I can just imagine how delicious these are! I’m a sucker for cinnamon sugar! I hope you’re feeling better soon!
Oh, you will love these! Snickerdoodles are delicious! You should absolutely try them. 🙂
*faints* I NEED this in my life. How tremendous 🙂
