Mother’s Day Cookie Cake

I realize this is a little late, but this is my Mother’s Day recipe. I think that my mom really deserves a day to celebrate what she does.  I mean, with ten kid,s she really does a lot! She gives so much of her time to make sure we are all happy and growing up to be young successful adults. I thank the Lord for such a precious gift! This cookie cake was just one of the things we did to show our appreciation.

Note: We doubled the recipe and made a vanilla filling to put between the cookies.

Chocolate Chip Pizza Cookie

Ingredients:
3/4 cup butter or margarine, softened
3/4 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla
1 egg
2 cups all-purpose flour
1 teaspoon baking powder
1/2 tsp. salt
1 cup chocolate chips

Directions:
Beat butter and sugars in a medium bowl. Mix in the vanilla and egg. Stir in the dry ingredients till well combined. Mix in the chocolate chips OR for a more dramatic chocolate chip look, save them for sprinkling on the top of the pizza dough.

Use a rubber spatula to spread and press the dough evenly into a greased 12″ pizza pan (with 1/2″ sides). If you didn’t already mix in the chocolate chips, sprinkle them on now, then lightly press them into the dough.

Bake in a preheated 350 degree oven for 18-22 minutes or until golden brown at the edges.

Yield: One 12″ pizza cookie that serves about 12-16.

  1. That looks absolutely gorgeous Kloe! My mum’s not a big fan of cake or cookies so I hardly make her this kind of thing, but the special icing and the filling (oh yum!) makes it extra pretty. Hope that you all had a wonderful Mother’s Day and that your mum felt very spoilt! x
