Strawberry Oatmeal

So most of you know that I am on this “oatmeal challenge,” and it has been lots of fun! Today I tried a recipe that tasted absolutely fabulous! It is originally called blueberry muffin in a bowl. With a title like that, I was super excited to try the recipe out-so I did! My oatmeal ended up being more of a strawberry cream in a bowl…but with no sugar, so it is good for you. 😉 You can really do whatever fruit that is in your pantry at the moment, since we all don’t have blueberries and strawberries on hand. I am sure that you will love this if you give it a chance!

Strawberry Cream/Muffin in a Bowl

  • 1/8 to 1/4 cup nondairy creamer (I use Silk)
  • 1 serving cooked bulgur or oatmeal
  • sweetener of choice, to taste (I used Honey-maybe 2-3 tsp)
  • 1/2 tsp pure vanilla extract
  • fresh or frozen blueberries or strawberries, post-blending
  • 1/4 cup of oat flour or completely blended oats (optional)

Make sure to cook your bulgur or oats with salt. (I use 1/4 tsp, and it’s important to put this in before cooking the grains.) Once cooked, put the bulgur or oats in your blending gadget. Add everything else (except berries) and blend! Now add in some frozen blueberries, or any other fruit, nut butters, chocolate chips, etc.

  1. beautiful way to eat oatmeal, Kloe. I have oats every morning, and will try this sometime. What is the reason for adding salt before cooking the oats, do you know? I have seen that before, and am just curious.

    • Thanks! It was so good! I was surprised it turned out since I wasn’t sure how honey and fruit would mix, but I didn’t want to use sugar. (I have enough of that!) It turned out nicely though.
