Creamy Banana Coffee Cake

Hey everyone! I can’t believe I only have one other “banana-cake-like” recipe on this blog!  I am a total, and when I say total, I mean _total_ banana fan. Let’s see a show of hands for how many are like me…..okay, now I feel much better.

 Alright, I have a special treat for you banana fans. Ta-dah! This recipe! It is a moist banana bundt cake. The cake is absolutely amazing! On top of that, it has a creamy ribbon in the middle. Yum! I could go for a piece right now even though it is almost 10 pm over here.  This is a wonderful cake for anytime of day, anytime of year! Go one, give it a try!!!!!

Creamy Banana Coffee Cake

Ingredients
  • 6 ounces cream cheese, softened
  • ⅓ cup sugar
  • 1 tablespoon all-purpose flour
  • ½ teaspoon ground nutmeg
  • 1 egg
  • ½ cup butter, softened
  • 1½ cups sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 3 tablespoons hot water
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • ⅓ cup fresh orange juice
  • 1 teaspoon vanilla
  • 4 medium ripe bananas mashed
  • 1 cup chopped pecans or walnuts
  • 1 tablespoon butter, melted
  • 1 tablespoon sugar
  • ¼ teaspoon ground cinnamon
 
Instructions
  1. Combine cream cheese, ⅓ cup sugar, 1 tablespoon flour and ½ teaspoon nutmeat, beating until smooth. Add 1 egg and beat again. Set mixture aside.
  2. Cream ½ cup butter, gradually adding 1½ cups sugar. Beat well. Add 2 eggs, one at a time, beating well after adding each. Combine soda and hot water and add to creamed mixture, stirring until well blended.
  3. In a separate mixing bowl, combine 3 cups flour, baking powder, salt, ½ teaspoon nutmeg and 1 teaspoon cinnamon. Add flour mixture to butter mixture alternately with orange juice. Stir in vanilla, bananas and pecans. Spoon 1½ cups of the banana batter into lightly greased 10 inch tube pan. Spread cream cheese mixture evenly over batter. Spoon remaining banana batter over cream cheese. Bake at 350 degrees for 50 – 55 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes before removing to a rack to finish cooling.
  4. Brush with melted butter and sprinkle with 1 tablespoon sugar combined with ¼ teaspoon cinnamon.
  5. Garnish with whole pecans or walnuts to finish.

  2. Oh, I feel like and outcast cause I really don’t like bananas 😦 It all started when I was a teenager and the doctor didn’t allow me to eat it I don’t remember why xD and I had to learn to hate it hahaha weird story, I know!

  3. wow–what a collection of flavors! Looks like such a basic cake, but WHAM it has so many parts to it 🙂 For sure this goes on the to-make list.

    You’ll appreciate a “project” of mine a year or so ago. We were given five bunches of overripe bananas by a neighbor and I asked advice from deLiz facebook followers what to do with them, then wrote about it at food for fun. It looks so moist and delish… I’ve been trying to come up with something to bake this weekend, and I think you just made my mind up for me! I can’t wait to give this one a try… AND….I just bought a new bundt cake pan, so it’s double the excitement for me! I get to try your recipe, and use my new pan!! ❤

  5. A slice [a large slice] of this and steaming cup of coffee seems to be the perfect breakfast to me. 😛 There is something truly fabulous about baking with bananas…I imagine the flavors blended with the sugar and spices [and everything nice 😉 ] yielded cake perfection. Delicious, Kloe!
