Chicken Salad Stuffed Tomoatoes

I feel like every time I post I am apologizing for not posting more…ugh! Well, here we go again with excuses. Seriously with school starting, company for a few days, a vacation, and more classes starting there isn’t much time in the day! I am sure everyone can relate though, right?

This post is well worth the wait though. My family and I loved this recipe. We just got some home-grown tomatoes and there is no better way to eat them than stuffed with fresh chicken salad and melted cheese. Am I right? This works as an appetizer, snack or light dinner. Perfect!

They are fast, easy, and totally delicious. We never have left overs!

Chicken Salad Stuffed Tomatoes

Ingredients:

3 home grown tomatoes

3 cups of your favorite chicken salad recipe

3 cups of cheese

Directions:

Preheat the oven to 350 degrees. Cut your tomatoes in half and spoon out the fillings to create bowl. Fill the tomato halves with a half a cup of chicken salad each. Top halves with half cup of cheese.Β  Place tomatoes in oven until cheese is thoroughly melted. (roughly 5-10 minutes)

If anything, I need to apologise right now for not being on track with blog reading… I’ve missed so much during my time away. Hope that you have been well? And these stuffed tomatoes? YUM. The cheese and tomato sound great with the chicken salad. Stuffing vegetables is one of the best ideas ever πŸ™‚
