I feel like every time I post I am apologizing for not posting more…ugh! Well, here we go again with excuses. Seriously with school starting, company for a few days, a vacation, and more classes starting there isn’t much time in the day! I am sure everyone can relate though, right?
This post is well worth the wait though. My family and I loved this recipe. We just got some home-grown tomatoes and there is no better way to eat them than stuffed with fresh chicken salad and melted cheese. Am I right? This works as an appetizer, snack or light dinner. Perfect!
They are fast, easy, and totally delicious. We never have left overs!
Chicken Salad Stuffed Tomatoes
Ingredients:

3 cups of your favorite chicken salad recipe
3 cups of cheese
Directions:
Preheat the oven to 350 degrees. Cut your tomatoes in half and spoon out the fillings to create bowl. Fill the tomato halves with a half a cup of chicken salad each. Top halves with half cup of cheese.Β Place tomatoes in oven until cheese is thoroughly melted. (roughly 5-10 minutes)
Enjoy, everyone!!

Delicious Kloe! You brought back memories of my first “adult” party contribution long ago…I took chicken salad stuffed cherry tomatoes! Yours definitely look better… especially with that cheese topping! π
Thanks, Nancy! Glad you like them. They are definitely perfect to take to a party. π
fantastic idea–lovely π Great balance of textures, flavors, etc. Your family eats well when you’re in the kitchen. (though I’d bet they eat well all of the time)
Thanks! I hope they like how I cook, because I do it a lot!
Haha, I don’t think you need to apologise AT ALL for not posting! You sound so busy Kloe! If anything, I need to apologise right now for not being on track with blog reading… I’ve missed so much during my time away. Hope that you have been well? And these stuffed tomatoes? YUM. The cheese and tomato sound great with the chicken salad. Stuffing vegetables is one of the best ideas ever π
Thanks! I guess, everyone is busy. I am so glad you like the recipe. I know I just love stuffing vegetables. It is such an easy and delicious dinner!
You’re a busy girl — no apologies necessary! Glad you’re back, because these tomatoes look seriously delicious! π

What a brilliant idea! I love having light dinners and so this would be perfect!
Me too! I love having salad for dinner, but my family gets sick of it, so this was a fun alternative.
Love this idea. I’ve been the same way, busy…busy…busy…= neglected blog.
Haha! Right, that is the life. I need to make time and not neglect my blog since I love it so much….
These stuffed salad looks incredible!! Love it!! π
Thanks! I love it too. π
Great idea. I bet this would work well with tuna salad too? hmmm….maybe not. Chicken, yes chicken. Plus cheese. Quick is good too. Thanks
It might taste fine with tuna, but it certainly does taste good with chicken!
Chicken for sure (just had tuna on the brain).
