Well, at our house we are trying to do a lot of soups and veggie-full dishes. I wanted a chili, but couldn’t fine recipe. So, this chili is straight from our kitchen, no looking up recipes, no googling and no paging through a cookbook. I am pleased to say, my family loved it! Even the little kids wanted more. Here is the recipe so you can enjoy this at your home too!
Vegetarian Chili (serves 12)
2 cups of corn
2 16oz cans of kidney beans (drained)
2 15oz cans of diced tomatoes
3 finely chopped bell peppers
2 finely chopped onions
2 cups of water
2 tablespoons of chili powder (heaping)
3 teaspoons of garlic powder
3 teaspoons of brown sugar (heaping)
3/4 cup of ketchup
1/2 cup of salsa
3 cups of shredded cheddar cheese
Instructions:
Mix all ingredients together and let simmer on medium heat for one hour, or until peppers and onions are apparent in flavor and are quite tender.
